Mollete with poulard in escabeche
An open mollete with Loma Verde poulard in escabeche, cheese from the Sierra de Cádiz, tomato, piquillo pepper...
Available all year round
Loma Verde poulard in escabeche, boned. Once the birds are slaughtered, we prepare the escabeche with the help of «El Colorao», another family business based in Motilla del Palancar (Cuenca), known for its long tradition and its exceptional escabeches. After boning the birds with care, we pack them in glass jars so you can better appreciate the selected pieces. Besides our poulards, the only ingredients are virgin olive oil, vinegar, garlic from Las Pedroñeras, black peppercorns, bay leaf and salt. Because it is boned, it is ready to be served straight onto the plate, on its own or as the main ingredient of a salad.
Escabeche, one of the great unknowns of Spanish cooking, is a traditional, genuinely Spanish method of preserving that was already described in thirteenth-century Andalusi treatises on gastronomy. Its distinctive flavour makes it highly prized among those who know it.
It is a long-life preserve: each jar keeps its qualities for more than two years from packing, with no need for refrigeration until opened. A larder always ready for an impromptu meal or a gift.
Each jar contains 275 grams net weight (675 grams gross weight), which is 3 or 4 servings.
Free-range pulardas raised in the Sierra de Grazalema, cooked in escabeche and boned by hand at El Colorao (Motilla del Palancar, Cuenca), then packed in glass jars. Only virgin olive oil, vinegar, garlic, black pepper, bay leaf and salt.
In the pantry, no refrigeration needed: more than two years of shelf life from packing. Once opened, keep it in the fridge and eat within a few days. Sent by standard post, without a cold chain.
Ready to serve, no cooking needed. Warm on a mollete, cold in a salad, or as the base of a bean stew. Our own recipes are on the blog.
